If you’ve been fitnessing for a while, you know that all in all it’s basically a big thumbs up. You have energy, you’re getting stronger, you can eat cool stuff and drink wine all the time (and cocktails sometimes) and you’ve got endorphins to spare. This is all very positive.
However, there is one sad thing about fitnessing, which is that you can’t eat a bunch of spoonfuls of mayonnaise. Or really even one spoonful, if we’re being honest here. This is tragic because any “salad” that isn’t your standard lettuce-and-friends concoction is made with mayo as a main component. Potato salad, pasta salad, tuna salad, chicken salad, and egg salad are all mayonnaise-fests.
SO NOW WHAT ARE WE GONNA DO??
Luckily, greek yogurt is the shit, and we can substitute it for mayo in this kick-ass chicken salad recipe. IT IS SO TASTY Y’ALL, I can’t even. It’s perfect for lunch, and you can make a big batch and have it all week.
Here is what you need:
- 1 pound of baked or grilled chicken breast
- 1 cup of purple grapes
- 1 cup of 0% greek yogurt
- 1 apple
- 2 celery stalks
Now, these photos are from a double batch I made so DON’T FREAK OUT that yours don’t look the same. Or just double this recipe, it’s effing awesome so you might as well make a bunch.
Anyway, first you’ll need to cut everything, and I mean EVERYTHING. The chicken should be in little bite sized chunks, the grapes need to be cut in half, the celery needs to be diced, and even the apple should be in VERY SMALL PIECES. Like this.
Now put all of those things on a bowl. Once you do that, it will look like this (remember the portion announcement from earlier, and stop panicking about it not matching yours):
Now put the greek yogurt in there, add some salt and pepper (like a tablespoon of each? I don’t know, just do stuff) and Mix. That. Shit. Up.
That’s it. Now you have really awesome chicken salad that looks like this.
You can put it in a sandwich, put it over spinach, put it in a salad, eat it with crackers, WHATEVER YOU NEED, YOU JUST DO YOU.
Eat a bunch of it because it’s like, pure protein. We’ve already talked about greek yogurt, and what an efficient source of protein chicken breast is, and all you’ve done here is add a little fruit and celery. Look at you, bein’ healthy and still eating delicious food. You’re so great.
